Another super kid-friendly soup recipe. Adam had 2 bowls for lunch and then insisted on 3 more bowls full for dinner!
So simple, so sweet, so delicious!
Lick the Bowl Clean Sweet Red Pepper Soup
12-ounce jar of roasted red sweet peppers packed with garlic clove
1 can chicken broth (2 cups)
3 Tablespoons tomato paste
salt & pepper
Drain peppers & puree in blender. Heat puree, chicken broth, and tomato paste about 5 minutes. Season with basil, a dollop of honey, salt & pepper to taste. Enjoy.
To make it even more enjoyable for the adults, next time going to use it to mix up some bloody mary’s. Yum.
